Cypress Lakes Resort, Hunter Valley

Planning a trip to the Hunter Valley in New South Wales, Australia? We recently spent our wedding anniversary at Cypress Lakes Resort, and it turned out to be the perfect base for exploring everything this beautiful region has to offer. The resort sits right in the heart of the Hunter Valley, making it easy to enjoy wine tastings, food tours, hot‑air balloon rides, wildlife encounters, and scenic lookouts — many of which we’ve done on past visits.

If you’re looking for ideas, I’ve put together a curated Hunter Valley Viator Shop with the best tours and experiences in the region.

Now, here’s what our anniversary stay at Cypress Lakes was like — and why it’s such a great place to stay if you want relaxation and easy access to everything the Hunter Valley is known for.

If you’re dreaming of a romantic escape in Australia’s famous Hunter Valley wine region, Cypress Lakes Resort is one of those places that instantly slows life down. Located in New South Wales, about two hours north of Sydney, it’s a destination known for rolling vineyards, peaceful bushland, and world‑class food and wine.

We chose Cypress Lakes Resort for our wedding anniversary, and it turned out to be the perfect spot for a relaxing getaway where everything we needed was right on the property.

A beautiful apartment overlooking Australian bushland

Our apartment sat above the gum trees with views across the resort grounds — a classic Australian landscape of soft morning light, birdsong, and peaceful bushland. It felt private, quiet, and ideal for a romantic weekend away.

Swimming, golf, and relaxation — all without leaving the resort

One of the biggest surprises was how much we could do without stepping foot off the property. We started the day with a swim in the resort pool before heading out for a round of golf at the Cypress Lakes Golf Course, one of the Hunter Valley’s most scenic courses. With rolling fairways and native Australian trees surrounding every hole, it’s a beautiful place to play whether you’re a golfer or just along for the views.

Lunch with a view of the golf course

After our game, we enjoyed lunch overlooking the fairways — a peaceful spot where you can take in the scenery and enjoy the relaxed Hunter Valley atmosphere.

A quiet afternoon in our apartment

The afternoon was all about slowing down. We headed back to our apartment to unwind, enjoying the rare luxury of having nowhere else to be.

A Sri Lankan dinner in the heart of the Hunter Valley

Dinner was the highlight of the day: a three‑course Sri Lankan meal at the resort’s restaurant Oak & Vine. I’ve never been to Sri Lanka, but if this dinner is anything like the real thing, the food culture there must be incredible. Every dish was rich, vibrant, and full of flavour — and now I can’t wait to compare it to authentic Sri Lankan cuisine when we eventually travel there.

Why Cypress Lakes Resort is perfect for international travellers

For anyone visiting Australia — or locals looking for a romantic escape — Cypress Lakes Resort offers the best of the Hunter Valley in one place. You can swim, play golf, enjoy incredible food and wine, relax in nature, and take in the region’s beauty without ever leaving the property.

It’s the kind of getaway that feels effortless, peaceful, and memorable — exactly what an anniversary trip should be.
